Have you ever wondered what makes our 'Roti's' soft? why does our Gravy's taste so uniform? What makes Fried Rice 'Fried'? and most of all what is the key essential ingredient which makes 'Tadka' tastes so awesome?

We're sure you guessed it right. Amidst the myriad of ingredients and spices, there is only one thing which acts as a super ingredient. It is 'Cooking Oil' and 'Ghee'.

Yes, we use Oil and Ghee in our daily cooking habitually. Oil is a key ingredient for making Tadka, Sabji, Fried items, Pickels, Salads and what not!

Oils:

Oils are made up of Fatty Acids, which play an important role in our diet. Cooking oil is basically processed from Vegetable Oil Seeds such as Peanut, Safflower, Coconut, Sesame, Soybean etc and from animal sources such as Ghee and Butter from Cow Milk.

Also, with fatty acids, Nature has blessed us with adding Unsaturated fats, Oleic Acids, Vitamins, Minerals as well as Omega3 factors in Naturally sourced and naturally extracted Oils.

Discovery of Oils:

At around 250,000 BC, when human learnt about how to produce fire, then was the time when people started using animal fats as edible oils for cooking purpose.

Interestingly, this invention of early-stage 'Oil' happened when human started cooking animal meat under fire, and Oil from the fat naturally started dropping out of it. This dripping fat oil made human curious and then the journey of cooking with 'Cooking Oil' started.

At the same time, the man also prepared earthenware (clay pots) for cooking and other purposes from stone and other clay material.

This was also the time when our ancestors discovered how to prepare 'Soap' by mixing hot oil drops with ash.

So, we can understand that human have been using edible oils for cooking derived from animals, and vegetables ever since most of Human Existence!

It is amazing to know that Cardiovascular Diseases were virtually non-existent until the use of 'Refined Oils' from the 19th century.

Today, we have a wide range of oils available in the market. They all are attractively packaged in a varied bottle and displayed on the racks in a shining grocery shop or in a mall.

But in old days (our forefather's era) people visited 'Oil Mills' with empty cans to purchase freshly churned cold-pressed oils from those oil mills. This oil was then used directly to cook daily food. It was just like the flour mills we still use and see around the corner!

That was called in our native language as 'Lakadi Ghani' or 'Ghana'.

This was our tradition which was so basic yet so advanced, which followed only Nature and nothing else.

Our Ancestors have had the wisdom of using cold-pressed oils for their daily cooking purpose. Hence we never saw our grandparents ever had any cardiovascular problems or other major health problems.

Ayurveda and Science both agreed to and suggest that the process 'Refining', destroys all the nutritional factors present in the oil. Also, makes it less tasty and original flavours fade away.

On the contrary, cold-pressed oils are extracted in such a way that no heat or any chemicals are used. Thus no harm can reach to the Oil and preserves all the nutritional values.

Oils & Us:

In today's never-settling lifestyle, it has become necessary that we be aware and alert of what we eat in our food. Taking care of oneself has become difficult and it is giving rise to many diseases, disorders, obesity etc. Well, we cannot change our time routines but we surely can manage our body by learning our physiology first.

The human body is perfectly described in our tradition and culture- Ayurveda. Basically, according to Ayurveda- Human body is made up of five elements of nature:

  • Earth

  • Fire

  • Air

  • Water

  • Space

Whatever we are and whatever we eat is compounds of the above five elements in more or less proportion. These 5 elements then make 3 'Dosha's' (regularities) of the human body.

  • Vata (Air+Space)

  • Pitta (Water+Fire)

  • Kaph (Water+Earth)

For the smooth functioning of the Human body, those 3 doshas have to be in balance. If there is even a slight imbalance in these 3 doshas, it will lead to the disease in our body. Ayurveda further says that what we eat can affect the ratio of this 3 doshas. It also suggests various diseases are the result of an imbalance of any of these doshas.

There are very few ingredients or foods available which are capable of maintaining the balance of these 3 doshas in our body. One of them surely is pure cooking oils! Pure Oils are capable of even getting the distorted doshas back on track!

Considering this fact, Ghani or Cold-pressed oil is Pure, Natural and have all the natural factors to help us stay fit, healthy and disease-free!
